Maybe doing just 1 or 2 songs in beat saber, which can work out well if you have several people taking turns so they get a reasonable break between short time periods in the headset.
Once they can go more like half an hour I have them play A Fisherman's Tale, which is a fun puzzle game on the VR that I enjoyed a lot. Still not super realistic, but good for a level above simply standing in place and waving your arm at flying blocks: https://gamefaqs.gamespot.com/a/forum/a/a2706632.jpg And they can either do that entire puzzle game in around 90 minutes if they can take it, or break it into three 30~ minute chunks.
