Let me use another example. The second boss in the Wind Waker is called "Kare Demosu" in Japanese (afaik it doesn't mean anything). In English it's called Kalle Demos. I figured they changed Demosu to Demos because it sounds better in English, not because "Demosu" would actually be an incorrect way of romanizing it.

"S" by itself doesn't exist in Japanese. It can't be Demos, the s needs to be accompanied by a vowel. The reason we know it's usually just straight up an "s" when romanized is due to the intention of the japanese word/name.
