Ehh, not really. There's plenty of bosses a veteran can oneshot if they hang back for like a minute to learn patterns, or actually try to shield unfamiliar patterns instead of rolling everything. Dark Souls is a series about learning, but it's entirely feasible to learn mid-fight. Everything's telegraphed, and if you're playing safe you probably won't get hit even if it's a new move.

I'd be surprised if people who beat Dark Souls 1 and 2 even die twice to Iudex Gundyr, the first boss of 3, and I'd be equally surprised if a newcomer beat it in under 30 minutes.
