Tbf Chi-Chi being overbearing in Z isn't exactly a new development in Z. She was also a lot to handle in the original DB too even when she was just a kid.

But her attitude in Z just makes a lot of sense. She has to wrangle Goku's lackadaisical ass and get Gohan inside before night falls. Then the instant she takes her eyes off her son he gets abducted by an alien, the dude that has sworn death to her husband then kidnaps him for a year, and then the next time she's laying eyes on him he's on TV and in the middle of fighting the giant bald dude she just saw destroy a city by raising his fingers. Then when she's finally reunited with him he goes off on a mission to a alien planet to help fight dudes much stronger than the aliens that just threatened her world and all so he can revive the previously mentioned dude that wants to kill her husband, again. And it's hard to fault her for feeling that way about the situation. For all she knows Goku died fighting these dudes, came back to life, and then minutes later is back to being almost dead again; and all the while this dead/almost dead asshole is trying to reassure her everything will be perfectly fine and advocate for her kidnapped son to fight even stronger aliens despite being a witness to all the death and destruction the supposed weak ones have done to her family, friends, and planet.

She's essentially just like Skylar and she's a normal wife and mother having a completely normal reaction to all the abnormal shit happening around her.
