I've played Rogue Legacy for *checks Steam* 26 minutes before deciding it's the type of roguelike I don't enjoy. To be fair, though, that easily describes 95% of roguelikes! I don't usually enjoy roguelikes either, but I felt Rogue Legacy was pretty good about not punishing you too hard when you died, and they had a mechanic in place that allowed you to control whether the dungeon was random or not.
