Cooking a $54 dry-aged prime strip to well done renders out all of the fat and makes it completely indistinguishable from any $5 grocery store cut. Similarly, adding a strong-flavoured sauce like ketchup masks the flavour of the beef itself and means there's no point in using higher-quality meat.
