The difference is occasional drinking generally won't put you at risk but the prescription level for adderall puts you at risk. Plus it's not "pretty much everybody," it's only 2/3s of the population (still a big number, but not the implied 95%+ rate) and, even among the 2/3s who do drink, most don't drink nearly heavily enough to pose a significant risk

Only 12% report drinking at least once per day, which iirc still might not pose as large a risk as adderall.
