The entire reason for the privilege you're describing, however, is purely an exposure thing. There isn't a massive influx of Italian immigrants who either don't speak english or speak it only poorly. Most Italians in America are the result of being descended from the italian families that came over during the 19th century. While Italian immigration to America is still ongoing, it's not happening at the same frequency as Mexicans or other spanish-speaking south Americans. Additionally, it's much harder for Italians to arrive in America illegally. This constantly reinforces a perception of "others" when it applies to south americans.

So you've got people frequently being exposed to south american immigrants with language and cultural barriers clashing constantly, and not frequently being exposed to the Italian version of the same thing.

The result is that Italians never get their "othering" publically spread the way mexicans do.

Genetically, Italians, Spanish, Portugese, French, Greek and Romanians are all a single ethnic group.

Mexicans and a few others have deviated due to interbreeding with natives at this point, though.
