One of my favorite parts of Skyrim was sneaking around laying waste to forts, making use of my Khajiit's night vision perk to spot people even in darker areas (and also so I didn't need to risk being seen because I was holding a light or something). Then I'd use a bow to kill them from a distance so I wasn't ever at risk. I had a more perverse approach. Using the pickpocket level 100 passive, stripe them naked, and leave em be. I wish the game woulda adjusted the dialogue accordingly to reflect the situation. --- "You must gather your party before venturing forth" "Go for the eyes Boo! Go for the eyes!" ...
