That's a name, a proper noun. Those often don't follow language conventions, or even mean anything. That goes double for, since a lot of our names aren't even native to English, but are immigrants from other non-English speaking nations. McGregor is almost certainly a glottal shift from one of those, but that's off topic.

Back on topic, these:

McRib
McSandwich
Moral McOutrage
McMovie
McApology

...are all nouns. So their phonemes, unconventional and faddish they may be, still more or less follow other english language conventions in how we use them, and how they modify the words they're attached to.
