Sounds like a made-up excuse to me, I say just respond saying, "No problem, I totally understand, hit me up when you are available and we will reschedule."

Then don't text her again until she reaches out. Assume that she won't reach out, because she probably won't.

That is the most socially graceful thing to do, I think. It leaves the door open for her if she wants to resume things, but takes the onus of reaching out to reschedule off of you and allows you to move on to better things.
