| hypnox 11/29/22 9:58:19 PM #13: | ReturnOfFa posted... and yeah, with hypnox. never washed meat. sometimes dabbed off with paper towel if it's excessively moist, but coating it with water would just be the opposite of that. I dap all meat, but I go a step further. I heavily salt most meats for an hour to draw the moisture out near the surface and then pat the meat with paper towels to dry it off.
