That's just George Lucas not understanding order and chaos are not the same as good and evil.

But he created the universe and established the rules, so whether or not it's stupid or oversimplified doesn't change the fact that it's objectively true for the setting.

Sort of like how people have pointed out that the Dark Side of the Force should still be a natural part of the Force (because death and anger/passion are implicitly natural and potentially even beneficial/necessary parts of life), or that the cleverest way to interpret the prophecy of Anakin bringing "balance to the Force" was that he did because he helped kill off both the Sith and the Jedi (because hundreds of Jedi but only two Sith is itself blatantly unbalanced). But then Lucas said no, both of those are wrong, so they're objectively untrue for the setting as it exists.

Sure, there's an argument that EU stuff or Disney movies might reinterpret things to change the underlying principles, but both of those are shit so I don't really care what they say anyway.

light side can still use things like lightning

That doesn't really matter, because it's less about what you do and more about the intent behind it.

So, for instance, Light Side Jedi can basically mindrape people, mutilate them, just straight up kill them, or otherwise ruin their lives, but it's okay as long as they're doing it dispassionately and for a "good cause".

The movies as presented tend to present the morality of the Force as very black-and-white, and somewhat borderline hypocritical. But those ARE the facts of the setting.
