It is theorized he would have run off with her if she said yes, but that was never going to happen and he knows that because he has literally seen the future where he enacts the rumbling (through Grisha's memories that were beamed back by his future self).

Eren's always been fucking insane. The ending was just a wake up call for those who chose to ignore it.

That makes more sense. I guess I remembered wrong and thought the theorizing about them running off was actually canon. Thanks for the clarification.
