Think the bit that makes Re:Zero works compared to so many other Isekai series is how outmatched Subaru tends to be.
I've checked out of so many self insert power fantasies where MC just stomps on everything with some cheat skill.
In Re:Zero it's usually a grind to find out where the starting line is and then you get some good despair moments once you find out how tall a task it's going to be to reach the next checkpoint.
It also doesn't hurt that the show has a pretty decent cast of waifus, even if I'm not too keen on Emilia and think Rem is actually too good for Subaru.
