I do find the food elitism kinda silly though. I have had excellent and genuinely terrible authentic Mexican food. I have had excellent and terrible Tex-Mex. Styles evolve and morph and the quality of the food itself is often entirely seperate from style and has everything to do with the ingredients and preparation.
