It wasn't hard but it was time intensive. I had to start yesterday making a starter. But that took about 3 minutes and then you let it sit for 15-20 hours. When that's ready, you mix it with more yeast, flour and water and mix it into a wet dough. Let it sit in a bowl for an hour to rise, then you fold it like 4 times and let rest for 45 minutes and repeat that 3 times. Preheat oven with cast iron and a Baking sheet at 450F for an hour. Then you form the bread gently into two loaves and put on parchmentand let rest under a cloth for 30 mins to proof. Transfer to the hot rack in the oven with the parchment and Add a cup of ice to the cast iron that is underneath the rack and close and bake for 25 minutes

The ice creates steam which helps crisp up the crust.
