It sounds odd, but I think it's that laying eggs is really nutritionally taxing for the hens. So stopping them from laying eggs means that they get to keep nutrients for themselves rather than for the eggs that they're laying. I've not looked into this, but I'm pretty sure that egg laying hens get really unwell from all of the egg laying. It's a natural part of their ovarian cycle.
