Here's a PhD who explains what food satiety is, cites an experiment showing which foods induce the most satiety, and talks about how Chinese food is missing many of those things (like starch and protein).

He doesn't cite any direct studies specifically about Chinese food, but you can see there's a correlation between the kinds of foods prepared and the kinds of food that leave people full and satisfied.

Looks like there's some degree of truth to the old joke, and not as much racism as you're alleging.

It is very racist to associate an extremely complex culture with a huge variety of different regional foods and dietary habits down into one very crude and not-at-all-true generalization. Also, the article you link is three paragraphs long, not academic in any way, and specifies American Chinese food. I think you really need to do some self-reflection before you offend people and then double down on it ( -_-)
