Been a long time since I've read it but I remember Griffith being a completely broken husk of a person who had been tortured to the edge of death for years before he used his demon-egg thing.
He was a person of endless ambition reduced to a shell that could hardly move or talk, he took the path did what he did out of ambition not necessarily out of desire to be evil. (Might apply to Wesker too? Don't follow RE lore too closely. I always remember Wesker just being a moustache twirling villain.)

To be very clear on Griffith: he does a ton of heinous stuff before he gets tortured from cold blooded murder to basically raping someone. He really was always a monster the behelit just gave him the ability to do much more.
