Monday, which is officially the first day of the week.
It's an international standard defined by ISO 8601 and NEN 2772.

It's also the start of the working/school week.
Sunday is the last day, hence why it's part of the weekEND.
If Sunday was the first day, you'd start the week with half of the weekend.

Some calendars start with Sunday. Luckily there's not many of them. I always steer clear of those. I've had one in the past, it was confusing for a whole year.

Your poll explanation is kinda biased. You already tell people what to fill in by telling them one option is sometimes considered and the other option is official.

NB other days are sometimes used as first day in religions, like Saturday in Islam and Sunday in Christianity.
