This is more an indictment of BLTs than anything else A properly-made BLT is both delicious and simple to make. Though I have to admit that the "L" in the BLT is easily the weakest link and can be subbed out for spinach with arguably better results. But mayo is non-optional because you need something creamy and acidic to make the sandwich work. Tomatoes are not acidic enough on their own.
