I always assumed potatoes lacked much nutritional value but I recently learned that I was wrong and they actually have all the macros you need, plenty of protein and fiber along with lots of other stuff especially if you dont skin them. Potatoes don't have very much protein. IDK where you're getting that information from. Penn Jillete lost fat, yes, but I'd wager he lost a lot of muscle too. IIRC he didn't exercise and if his diet was mostly carbs, then he likely didn't maintain what muscle he had.
