If my health and gym class knowledge holds up the reason people gain it all back is a combination of some muscle loss which slows the metabolism and not actually fixing their eating habits, so they eat like they are still at their heavier weights and they gain it right back.

This can be combated by slowly increasing your calories to their new level and doing some muscle building while eating carbs and protiens to gain muscle.

Most of the initial weight lost on keto is not fat. It's water weight and the glycogen in your muscles, as well as muscle loss. When you have the carbohydrates in your diet to replace your body's fuel reserves that puts on a large amount of weight quickly. We're talking 15 or 20 pounds for a person would be a typical range.

People may also continue to overeat and put on weight after that.

More studies are being done that are suggesting that high carb low fat diet are great for athletic performance, overall health, weight loss, and sustainability.

Long-term LCHF diets appear to be safe and may even improve several metabolic risk factors for chronic diseases in the general population. LCHF diets provide a promising way to help control body weight and fat mass while maintaining lean body mass in athletes engaged in weight-sensitive sports. There is emerging evidence that LCHF diets could be beneficial, particularly for performance in ultra-endurance sports. Their effect on field-based sports that require repeated high-intensity activities is also promising. It appears that at least several months of adaptation to a LCHF diet are required for the metabolic changes and restoration of muscle glycogen to occur.

So eat your potatoes. Just don't add the butter!
