I made some Keto "Mac" n Cheese with cauliflower, and it was legitimately the best mac n cheese I've ever had in my life. https://www.ruled.me/cauliflower-mac-cheese/ I roasted the cauliflower in the oven so it was slightly crispy and charred, then made this recipe.
