Honestly though, and I suggested this with the girl I'm seeing; you can feasibly start the show at S3 E1. They have a little mini recap that basically sums up the important events of season 2, names all the characters again and where they're at, and drops you right in at a good spot where they go around and "gather up the cast" again.
Season 1 is very weak, that's not preposterous to say. Season 2 gets a little better, but not by much. There are a couple of gems like Hunting Trip and 94 Meetings (also Ron and Tammy is good), but overall, nothing that you're really missing.
Starting at S3 seems to have worked just fine. Other than a few unimportant references (like the gay penguin wedding or Louis CK's character), you aren't missing much.
But I will say, since you seem dedicated to the show, you could start at S2 E23 when Rob Lowe and Adam Scott join. It's only two more episodes and it kinda irons down their intro and personalities.

I got up to Season 2 episode 11 and yeah it got better in Season 2 but I felt like I was forcing myself to watch through it. ---
