It really isn't, when i hear an american say colour they pronounce it colore, lore on the end. Dropping the u has literally made them pronounce the word differently. It's the same with mom and mum.

I really don't care but I generally spell it "colour".

I side with British spelling for most things. Paycheque, defence, honour, licence. But other things, I prefer the American spelling, like aluminum, center, tire.

Brits use both s and c, it depends on whether you are using the word as a noun or a verb.
