Overall fun factor in terms of fighting, either Acceleration of Suguri or the current style that Touhou fighters have adopted (yeah I'm absolutely going to get dunked on for this, but I have a looot of fun playin' em, gimmicks and all)

As games in general, I've always really liked the overall structure of Ultimate Ninja titles a lot, having the fighting game aspect essentially only serving as a mere side mode despite how fleshed out it is.

As a fighting game on the principles of, you know, fighting game... Likely Fatal Fury. It just did a number of good and smart things that own, and simply made it just work really well. I'm not sure if it's my favourite part, but the plane switching it had was the one thing I wish other games had decided to keep since. The rarity of that is also part of why I dig pre-storm Ultimate Ninja titles, since it did it, albeit while taking a pretty signficantly different approach that wasn't nearly as seamless (even if it was still cool as hell). I also still get a lot of enjoyment out of MvC titles, though post-Infinite... I dunno. Darkstalkers is up there too.
