I'm not really a huge fan of cheese so it can go either way. I'd say I enjoy Cheese and Crackers but that's really it. Something with some good spice like Pepperjack..

The only dairy I actually enjoy is Ice Cream.

Ice cream is really good, too.

When it over powers the other ingredients

But its only pasta and cheese. And the pasta doesnt have much flavor on its own. So, the cheese would overpower the other ingredient whether it was a little or a lot...

Usually 2 boxes of macaroni and a giant sauce pan of homemade cheese sauce (4 bricks of cheese minimum).

If i'm making smaller dishes it's 2 bricks per dish (I've done this where one was a white sharp cheddar and one was a pepperjack) in smaller 11x9ish pyrex dishes.

If you made those cup sizes, what would the amounts be?
