So for a completely theoretical person you'll use "they/ them" pronouns, as that's grammatically correct. But the same also applies to real-world people.
Example: you see a man grab a backpack at a store and he runs off with it. A girl frantically runs by and asks what happened to her bag. You tell her a man ran off with it. She then asks "did you see where they ran to?" despite knowing it was a man. Still grammatically correct and the information surs requesting you convey would be entirely unaffected.

So then, now that I've explained pronouns, a third grade concept that you hopefully had some grasp of by 6th grade which is the absolute latest you should have started writing 5 paragraph essays... Do you understand how using they for theoretical people but not real life people makes you seem like an insufferable jerk?
