I would fast track God of War it's a great game and is pretty short compared to the rest of your list
I would not recommend playing Witcher III and BOTW back-to-back unless you're a huge open-world junkie, I think most people would start feeling dragged out doing two large games so close together
Nioh and Okami could be used to break up some of the same-ness though, they're pretty good on their own as well
tbh I would skip the AC games and Skyrim. Skyrim is way too old that if you haven't played it when it first came out, you'll be annoyed by the clunkiness and dependence on mods (although if you like it, you like). the AC games are fun on their own, but they're not exactly on the level of the rest
D:OS2 is a lot of fun, def recommend doing that at some point
Pikachu should be fun for an easy nostalgic run, and Shadow of War is great if you wanna kill some orcs (story is shit though)
