There are essentially 4 options when it comes to anime adaptations

1) Wait for the manga to be over, then adapt it. This has led to some pretty good ones like Death Note and Parasyte, but the Parasyte manga has been over for a very long time iirc. For longer running series like One Piece and Naruto, this means you might never get an anime, so it almost never happens.

2) Take long breaks to wait for the manga to have enough material to make substantial seasons. We've seen this with Attack on Titan and One Punch Man. Works pretty well if you're patient

3) Diverge from the manga. Notable examples are of course Fullmetal Alchemist and Tokyo Ghoul season 2. Works to varying degrees of success.

Or

4) Use filler material to keep dat cash flow going until you have enough material to make worthwhile content, just in time to keep people from jumping ship on your series entirely
