Because it's the Force, not a power the Jedi own exclusively. The movie explains that.

why she and Kylo joined forces halfway through the movie

Because Rey felt that she could turn Kylo to the light side and their interests were aligned at that point. There is also a Force connection between them that is established but is not neccessary to explain, at least not in the middle section of a trilogy. The movie explains all of that too.

who Snoke was.

The Supreme Leader of the First Order, and an obvious analog to the Emperor who was likewise never explained beyond the master/servant relationship that he had with Vader. Kylo's central conflict is with himself and the Force and desire to live up to what he sees as the potential he has as Darth Vader's grandson. Snoke stands in the way of that and is not central to the plot.
