I usually save about a dozen of each in a chest in my workshop area, then sell any excess. (And if you're trying to date Abigail, give her your extra Amethysts.) But nearly every non-gem mineral has almost no mechanical value (not even as gifts, for the most part), so just throw it in your sell box for a little extra cash.
