Some of the potions they take will temporarily dull them so they will be able to keep fighting when otherwise they might pass out. Their training also comes with large amounts of physical pain so they learn to manage it quite well. Emotionally they are somewhat stunted, the mutations they have to go through makes it harder to feel, and their stoic philosophy makes them appear unfeeling. That along with the fact that politically they are supposed to remain neutral. Their job is to kill monsters and that's it.
