Using a pan to make quesadillas (preferably cast-iron) you can use a small plate to flip them. Simply put the small plate over the quesadilla, hold your hand on the plate, and flip. Then just slide the in-tact quesadilla back onto the pan.

(Im referring to when you use two corn tortillas, sandwich-style to make your quesadilla. Theyre usually challenging to flip without falling apart. If youre simply using a flour tortilla, folded over in half, those are easy to flip with a spatula)
