Imo the complaints about the breakable weapons are overblown. Not that it isn't annoying sometimes but you can upgrade your weapon capacity and you'll be swimming in weapons faster than you can break them at some point. Though I do understand that the principle alone can be off-putting.

As for Star Wars, there are difficulty settings and you can change the difficulty on the fly. There's also no unlockables or anything tied to any of the difficulties so you can play at the level you're most comfortable with. I suck at the Souls series and haven't beaten any of them but I got the platinum trophy for Star Wars while playing on the second hardest difficultly the whole time. Some of the boss battles tore me a new one but it was very enjoyable overall.
