You don't make anything from scratch

You do craft food and potions/elixirs though. And for some areas of the game you need to be able to craft some or buy some to advance due to the weather.

The durability thing isn't that big of an issue. (Except on the hard difficulty, which can be ridiculous at times due to weapon durability.)
The biggest issue with the game is repetitiveness. You fight the same handful of enemies over and over again, and shrines don't offer that much variety either. Especially the lazy combat shrines...

Besides that, the game is very fun. The sequel definitely has a great foundation to build off of too.

Oh, and as for durability. There is a weapon that doesn't break, but it requires some play time to acquire.
