You could always make your own cheese sauce. Make a roux, add milk to make a bechamel, then dump in whatever cheeses you want. It's really quite simple, though it does rely on having actual cheese available.
I usually make it that way when baking it. I only had a small bit of parm, though, and I recently switched to almond milk. Sounds like the makings of a mediocre cheese sauce.
