The entire game is built around an "Attack Triangle" system of Normal Attacks, Counter-Attacks and Grabs. With few exceptions, these moves will be outright invincible against the type that they oppose - of course you'd expect normal attacks to stuff a grab, but counter-attacks (which can be done raw) will blast right through normal attacks and grabs are completely invincible to counter-attacks. While, as you mentioned, fighting games generally have an aspect of this, it's actually the whole game here.
