My dad was born in the South but did not pass on his knowledge of grits (he hates them). A little cheese doesn't hurt. Any bit of pork fat helps a lot. Shrimp or eggs (or both) to taste. Fun fact: Native Americans introduced it to the white man. African slaves adopted it because it reminded them of couscous.
