I've known of it but don't know anyone like this as I tend to not be around people who lie all the time.

Tell her to seek help. CBT could possibly help here and/or medication. Stuff like writing down the truth rather than saying out loud might also help. Support for anxiety or mental health in general is very limited and a employer trying to be a psychiatrist certainly won't change that. The only people that can help is the professionals and even then it might not help her.

You're literally said she has anxiety issues. I'm sure her priority though is to please you so she'll just flick the switch and turn it off because it's a inconvenience to you. A lot of things should come natural however we all have our issues.
