One thing I struggle with is I'll cook a healthy dinner but there's more food than for one person and I end up overeating.

after i cook a meal, i divide up the portions right away, before i've even had a bite. i divide the food up into the # of portions i expect, put a serving on my plate, and then put the excess into containers for the fridge/freezer. this helps me regulate portion sizes.
