Granted, a lot of thieves are more the smash & grab type so they'll get in there, they'll grab cash and small high-value items, and get out. They aren't going to bother with video games most of the time, or they're not going to grab much.

Indeed. Games have relatively little resale value, as much as their replacement value is pretty high, so unless there's an obvious, easy way for them to take them in large numbers (a case full of Switch carts, for example), or there's nothing else of value in sight, they probably aren't going to bother.

The systems, on the other hand, are a prime target. They're a little on the bulkier side, and the need to be careful with them to avoid damaging them beyond saleworthiness complicates matters (to say nothing of the loss of value if all the cords are missing, and burglars generally won't bother unhooking everything), but it's usually possible to get a decent enough payout from a stolen system to make them worth taking.

Sucker alls he has to do is take the console

And then you sign into your account on a new console and download them all again. Inconvenient, but a lot cheaper than buying a whole new collection.
