Well, because the main audience for most of those games is horny teenage and 20-something dudes who want to stick their dick in digital women. (Though Leather Goddesses of Phobos came out around the same time, and THAT allowed you to choose to be either male or female - but you could only be straight, because it was the 80s and homosexuality hadn't been invented yet. That's actually changing, though. There's been a proliferation of games where you can chase dudes instead, and games where you can pick gender (or choose to be futa/androgynous/gender neutral/etc). You just have to go looking for them (and most of them are going to suck, and will likely never leave early release/be finished, because most erotic games these days are all indie projects by small teams of amateurs).
