I gave up on making omelettes and will just scramble in meat or cheese. Something tells me it's my patience but one side will cook and the other stays runny. I think I've tried a few methods, too. I like eggs all style but scramble is just so easy and somehow more filling. I could eat so many over medium or fried eggs without feeling it. Boiled and poached are great, especially the ease of the former. Deviled is tasty, but that's a lot of work.
