On-topic: Yeah they should have alerted flight crew about the guy sleeping on their seats. I have no idea how something like this could have escalated to the point where they had to get removed from the flight.

Like, I'm picturing it like this - The couple is sitting in the economy plus seats. Flight attendants come over and say "you're in the wrong seats." So the first thing the couple should say is "but there's a guy asleep in our row." So, next step, why doesn't the flight attendant go move the sleeping guy into his own seat?
