Neither.

In Zelda, always Link, because it's canon and feels wrong to call him anything else. (same goes for FFVII, FFX, and Persona [with Minato and Yu. P5 was Akira in my first playthrough and a half, but future ones if I do them will be the canon name Ren Amamiya])
In Skyrim, I create a character, usually female (for eye candy purposes, lol), to fulfill the playstyle I am going for.
In Stardew Valley, I'm not playing as myself.

...it's weird. I never play as myself in any game. Perhaps it's because I want to create someone else's story and not extend my own. And what's really weird is that I get more invested in crafting a story if the character is female despite being a guy.
