I don't think we've seen Strange open a portal to another planet. Besides, it not like there's a rule saying an infinity stone is the only thing capable of doing what it does - The Power Stone is an obvious example, force is a pretty normal concept. But other forms of telepathic abilities have been shown in the MCU, it's not just the Mind Stone capable of it. I'm sure the Reality Stone also isn't the thing capable of illusions and I'm sure it's not the only thing capable of transforming one object into another.

As for Heimdall, that was clearly him using his last bit of power. Pretty odd thing to question. You might wonder why he didn't use it on his beloved Thor, but the Hulk fought for them and lost even though he didn't really belong there. It makes sense why he used it on him, and it definitely makes sense why he didn't use it on more people.
