Win condition for the sides weren't the same - assassin's were there to kill him and they were deadly serious about it... which they should, as profefssional assassins. Chrollo was playing his own game, testing himself against them generally without necessarily focused on defeating or killing them in return. Then when the win condition for the Zoldyecks disappears, they immediately give up and leave. It felt like a real situation at all times.
